Bad things come in Threes.

I have not had good luck this week, horrible luck actually.

1. I decided to mess around with my blog; big mistake. I think I only made things worse. I still have a ways to go before fixing it to a point where I am happy with it. 

2. My co-worker and I set up a facebook page for our work. We were able to claim one of their vanity URLs and everyone was happy. I then noticed that there were several other pages with the same name that had been created, so I decided to merge two of them; huge mistake! Not only did we loose all the content, we lost the vanity URL. I'm not impressed with Facebook - their contact support is also horrible and I have no idea if I can reclaim this URL.

3. Today, I went into log into our work google calendar. It was set up with our work email address (a non google email address), but I was prompted to create a gmail account. Normally I can skip this step, but it wouldn't let me. I'm not quite sure why. I figured there was no harm to link a google account; enormous mistake!! On the work website, there is a google calendar embeded. Linking a google account completely messed this calender up so our web guy had to delete the non-gmail email address and redo all the coding for the calendar. Ugh! 

Its only Wednesday -- I refuse to touch anything else this week. I have done enough damage.

Recipe // Baked Herb & Parmesan Potato Slices.


Ingredients

2 whole russet potatoes (medium size)
2 whole large red potatoes
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp dried oregano
1/4 tsp dried thyme
1/4 tsp pepper
1/4 tsp dried parsley
1/4 tsp dried rosemary
2 tablespoons olive oil
1 tablespoon grated parmesan cheese

Directions

1. Preheat oven to 375 degrees F.

2. Rinse the potatoes and dry them off with a paper towel.

3. Slice the potatoes at a slight diagonal. Try to keep the slices at a similar width (about a ½ inch) so they cook evenly.

4. Add the potato slices to a large bowl.

5. Add the herbs and spices, and then add the olive oil.

6. Mix all of the ingredients together so the olive oil and herbs evenly coat both sides of the sliced potatoes.
 
7. Lay the potatoes on to a cookie sheet. Try to lay the potatoes as flat as possible on to the cookie sheet rather than stacking the potatoes on top of one another.

8. Bake in a preheated oven for about 20 minutes or until the thinnest pieces are a golden color.

9. Serve warm right out of the oven as a side dish.


Potatoes are my absolute favorite vegetable and I love finding/trying new potato recipes. As I was scrambling for recipe ideas, I found this easy to prepare, super delicious recipe on pinterest. Enjoy!

Twelve Days.

In twelve days my boyfriend writes his CFA exam! Life lately has pretty much revolved around his upcoming exam. It's a no-fun zone around here! 

The reason I'm writing this post is because I am excited about everything that comes after it....!

We have been together for just over five-years now and have wanted to live together for quite some time. Unfortunately, there has always been bad timing. I was working full-time, he wasn't. Then I lost my job and he started working full-time. He quite his job and I'm now working two part-time jobs (full-time hours). The cost of living around here is absurd. Even though only one of us is working, we hope to make it work. Where we are going to live, we don't know yet. That will have to be discussed, among other things, after his exam. 

I am also super excited about moving forward in life. Because I'm still living at home, I do not feel my age. I thought by now I would have this fabulous job and so much more, but I don't. When I graduated University in 2008, the economy was starting to crumble and the job market was tough to enter. Unless you had these great connections, you're out of luck. Unfortunately, the economy still sucks and I wouldn't be surprised if we go through another recession. Anyways, I think we both need this push, to move out of our comfort zones and to see where the future takes us. I can't wait...!

Blogging // Did I say something wrong?

I noticed this evening that I have lost a blog follower. I know I shouldn't take it personally. Perhaps it was my rant? I'm not sure. The past few days, I have been going through past blog posts trying to re-link everything back to their sources -- something I should done from the beginning. It's done and hopefully I never have to think about it again.

Good to Know // Don't Misuse Your Bed.


Your bed should only be used for two things - sleep and sex! If you regularly use your bed for activities that are not conducive to sleep, such as reading, eating, writing your blog (like I am doing right now), or watching television, you may find yourself  too tempted to pick up a book or reach for the remote when you should be settling down for sleep. So, if you are not tired, don't go to bed. If you cannot fall asleep within 15 minutes, get out of bed and do something that literally bores you to sleep; and make sure not to return to your bed until you're tired and closer to sleep!
