March's Resolutions.


Hello March, I cannot believe you are here already! It feels like only yesterday it was December and we were celebrating the holidays. And now, we are already three months into 2013. Needless to say, the past three months have flown by!

As I mentioned last month, I started reading The Happiness Project and have started setting resolutions for myself each month. Last month, I added a few new resolutions to my list. I would like to say that I was successful in all of them, but that would be far from the truth. I hate to admit it, but February has been a tough month for me. 

- up until the other week, i was going to bed early most nights. then i started playing around with my blog's code some more, and that plan flew out the window. the exhaustion finally caught up to me this week; so, for the past few nights, i have had to force myself to bed earlier than i would like. 

- cleaning the condo has also taken a back seat, mainly because i am working tons and the boyfriend and i are on different sleep cycles. i am hoping to get back on track in a few weeks.

- exercise, oh how i really dislike you. i was actually doing pretty good for a week or two, maybe even three. my biggest mistake was starting to stay up late again because once i started doing that, i had little to no energy to exercise. though i have been doing regular stretching almost every day! 

- last week i ran out of ginger root, but i had been drinking ginger tea every day. it was the best thing i could have done all winter because i didn't get sick once. i've also been drinking water more regularly (not as much as i should be drinking though). to my surprise, in the evenings, i actually have started to crave a nice cold glass of ice water. reducing the soda pop has been really hard. some days i can go with only half a can, other days i really crave it. 

Knowing that the next two months are going to be hell at work, and I am already feeling overwhelmed with the work load, I am not going to add any new resolutions to my list this month (or next). For the entire month of April, I will be working 7 days/week. Ugh! Anyways, my main goal is to work slowly on my exercise and get myself to a point where my muscles aren't in as much pain. Every time I go to get a massage, he comments on how bad they are. This is something I really need to focus on, and sitting up straight!

Finally, its the weekend! I still can't believe February has come and gone so quickly. I honestly feel like I have not accomplished anything (I'll get into that in another post!) ... wake up, go to work, come home, blog, cook dinner, watch tv, go to sleep and repeat. Next month is going to be hell for me because I will be working 7 days/week for an entire month. I am already exhausted just thinking about it. Enough about me, here are a few of my favorite bookmarks from this past week.

2 // I may be addicted almost all things Roxy; they have this new collection DVF coming out March 7th -- I am really excited.

3 // Who knew you could grow green onions in water?! Until recently, I had no idea. I was a little skeptical at first, but I tried it the other day and it works. Not all of them grew, some of the little side bits died, but I am quite impressed!

4 // Have you ever heard of the website Good? I subscribe to their daily emails and every so often find articles, etc to read. I just found out they have a tumblr page, very cool! 

5 // Currently, I am in love with this pink bracelet and these push pins. I work part-time at a Yacht Club, so this bracelet would be perfect for my wrist. *hint hint* 

6 // The Dollar Store Workout, some good ideas for those wanting to work out at home without wanting to spend lots of money.

7 // These Oven Roasted Potatoes look so delicious!

Recipe // Chicken Mozzarella.


Ingredients

2 large boneless, skinless chicken breasts
1 can crushed tomatoes
Mozzarella cheese

Directions

1. Preheat oven to 375 F (190 C).

2. Cut the chicken breasts in half, and put into glass dish and cover with some of the crushed tomato sauce.

3. Cut the mozza cheese into slices and put on top of the chicken and sauce.

4. Add a little more sauce to over the cheese, and a little more cheese on top of the second layer of sauce.

5. Cook for approximately 45 minutes.


This recipe is my mom's take on Chicken Parmesan, but its a lot simpler and quicker to prepare. It's also one of my favorite dishes! I am really bad at taking photos while I cook; this is the only dinner photo I have. If it were a photo of my plate, the potatoes would be covered in tomato sauce. So delicious, and did I mention, easy to make!!! Enjoy!

High Five for Friday.


1. I love this guy, my boyfriend. Snapped this photo of him while he was chatting with his mom. I played around with a few filters and ended up changing it to black and white, I love how it turned out!

2. Love that when I leave work at 5:00 pm, its not pitch dark any longer.

3. We live near the ocean, a short 5 minute walk away. So lucky and grateful to live in such a beautiful place. 

4. My childhood photo of me on my bike ended up on the back of my job's catalog. My photo is the bottom-right. Love it! 

5. Had a massage appointment on Thursday. I love how relaxed I always feel afterwards!
