Every year, I always say that I am going to eat healthier food and exercise more. And every year, I never follow through. I recently saw "Forks Over Knives" which was an amazing documentary that examines the profound claim that most, if not all, of the degenerative diseases that afflict us can be controlled, or even reversed, by eating more of a whole food, plant based diet (and less meat!). While I don't think I could ever cut out meat entirely, I think I could limit the quantity I eat per meal, while eating more vegetables, etc. The fun part about this new years resolution is finding new, healthy recipes!
I have recently started working six days/week and am having a tough time keeping up with everything. Part of the problem is that I feel like I am living two lives between two different homes - this is something that I hope to change in the next few months. By doing so, I hope I won't find it as challenging to keep my new years resolutions.
